This traditional pastry from Sassello is made by mixing together almonds, apricot kernels, sugar and egg white. As the dough is extremely delicate the entire process has to be done by hand. In our Sassello laboratory Panarello Macaroons are packaged freshly baked to preserve the full flavour of their soft, almond-flavoured centre.
